Sunday Muse

ABV: 18%
Available: in 500 ml bottles

Blended from Ribston Pippin (90%), Gold Rush, and Albemarle Pippin apples, and fortified with Gold Rush eau de vie, Sunday Muse is inspired by one of Castle Hill’s early inhabitants, Amelie Louis Rives Troubetzkoy. With abundant acid and a touch of bitterness, this port has a surprisingly refreshing finish.

Heritage Blend Pommeau

ABV: 18%

Available: in 375 ml bottles

A blend of Harrison (70%), Puget Spice, Dabinett, and Winesap juices provide a medium body with caramel and nutmeg on the nose and intense lemon, bourbon, and banana flavors that linger on the finish.

Hewes Crab Pommeau

ABV: 18%

Available: in 375 ml bottles

Hewes is one of the few surviving true cider apples from Pre-Prohibition times. Featuring flavors of honey, coconut, cardamom, and melon with a soft powdery finish and a lighter note of bourbon than the Heritage blend.

Celestial 2016

ABV: 7.2%
Available: In 750 ml bottles

Stellar fruit, floral and spice aromas overlay a foundation of supple tannins. Bright acidity leaves a clean refreshed palate. Bittersweet cider varieties such as Dabinett are blended with heirlooms (Albemarle Pippin, Winesap, and Grimes Golden). Pairs with Asian dishes, ripened cheese or other exotic fare.
