1764 Port

Referencing the year of Castle Hill Estate’s founding, 1764 is blended with Black Twig (90%), and Albemarle Pippin Apples, and fortified with Gold Rush eau de vie. Warm and chocolatey with a long finish of vanilla and melon.

Sunday Muse Port

Blended from Ribston Pippin (90%), Gold Rush, and Albemarle Pippin apples, and fortified with Gold Rush eau de vie, Sunday Muse is inspired by one of Castle Hill’s early inhabitants, Amelie Louis Rives Troubetzkoy. With abundant acid and a touch of bitterness, this port has a surprisingly refreshing finish.

Heritage Blend Pommeau

A blend of Harrison (70%), Puget Spice, Dabinett, and Winesap juices provide a medium body with caramel and nutmeg on the nose and intense lemon, bourbon, and banana flavors that linger on the finish.

Gravity 2018

Gravity is back, but is a little departure from previous editions. Blended from 2016 and 2018 fruit, its bone dry and has enough tannin to create a full-bodied round cider. Please drink this one at room temperature. The early palate presents a rush of fruit, which gives a momentary impression of some sweetness. In the late palate, however, mild bitterness, and a touch of astringency and acid assert themselves. ABV is 8.0%. The primary varieties are Dabinett (23%), Goldrush and Rhode Island Greening (both at 15%), Black Twig and Golden Russet (both at 11% and responsible for confectionary black cherry nose).

Celestial 2016

Stellar fruit, floral and spice aromas overlay a foundation of supple tannins. Bright acidity leaves a clean refreshed palate. Bittersweet cider varieties such as Dabinett are blended with heirlooms (Albemarle Pippin, Winesap, and Grimes Golden). Pairs with Asian dishes, ripened cheese or other exotic fare.

Celestial 2018

We are very excited to announce the release of our first cider made with 100% estate grown fruit! This marks the beginning of the payoff of our 10 year-long (so far) effort to create ciders that are expressions of this land. Carefully blended from 5 different ferments and 14 varieties of apple, the main players are Harrison (35% look for melon and peach), Black Twig (33% notice the black cherry notes in the mid palate), and Ashmead’s Kernel (8%). We’ve back sweetened with Albemarle Pippin juice to 0.9% residual sugar. ABV clocks in at 8.1%. This is a cider with a lot of fruit, but also quite a bit of tannin. To optimize the balance we’ve kept carbonation levels low, and highly recommend serving at about 60°. It’s easy to think of it as a white wine as it looks similar, but with all that tannin it will come across as a bit closed and hard edged at refrigerator temps.

Levity 2017

Crafted in buried terra-cotta vessels, Levity 2017

Aromas of caramel, lemon zest, black cherry, almond and guava.  In the mouth, it is very full bodied with both astringent and bitter tannins, flavors of honey and tangerine and a very fresh preserved lemon finish.

ABV 7.9%

Levity 2017 was awarded Garden & Gun’s Made in the South Award (Runner-Up) in 2018.

Serendipity 2016

This vintage of Serendipity features a blend of Pippin and Gold Rush apples fermented with two yeast strains. Citrusy with floral notes and a soft, slightly sweet finish.

Serendipity 2018

The 2018 vintage of Serendipity is a blend of Gold Rush and Albemarle Pippin apples with a delicate nose of Confectionary, banana, honeydew, and citrus aromas. These continue through the palate with crisp acid throughout.  Acid predominates on the finish with hints of toast and caramel.

Big Pippin Ginger

Big Pippin packs a big punch as a cider fortified with oaked apple spirits and pressed ginger. Made from hand-pressed, all-American apples, Big Pippin harmonizes with notes of lime, vanilla, lemon and grapefruit.

ABV: 11% 


Library Selection Celestial

Earthy, classic and simply delicious, Celestial has a firm tannin structure with notes of spice and citrus from a blend of Pippin, Winesap, Grimes Golden, Ashmead's Kernel, and English Bittersweet apples. Moderate astringency, lingering acidity, with just a hint of sweetness.
